Blueberry Pie​



Crust Ingredients:

- 1 1/2 cup all-purpose flour

- 1/4 teaspoon salt

- 1 teaspoon granulated sugar

- 8 tablespoons butter

- 8-10 teaspoons cold water


Combine flour, salt and sugar until well incorporated. Add in small pieces of butter, and cut until pea-sized. Add in water, one teaspoon at a time. Shape into disk and refridgerate for 30 minutes.


Pie Ingredients:

- 3 tablespoons white sugar

- 1/2 teaspoons of cornstarch

- 1/8 teaspoon salt

- 1/8 teaspoon cinnamon

- 1 cup fresh blueberries


Combine all ingredients and sprinkle over blueberries. Pour mixture into crust, crimp edges. Bake pie for 1 hour, or until golden brown.



Blueberry Muffins



- 2 1/2 cups flour

- 1 1/2 teaspoons baking powder

- 1/2 teaspoon soda

- 3/4 cup sugar

- 1/4 teaspoon salt

- 2 eggs, beaten

- 1 cup buttermilk

- 1/2 cup  butter

- 1 1/2 cups blueberries, fresh or frozen


Yield: 24-30 muffins


Pre-heat oven at 400 F. Sift together all dry ingredients. In another bowl mix eggs, buttermilk, and melted butter. Make a well in dry ingredients, and pour in liquid ingredients. Fold in berries with wooden spoon. Pour into greased muffin tins, and bake for 20-30 minutes. Once baked, top with sugar or cinnimon if desired.

Blueberry Smoothie​



- 1 cup blueberries

- 1/2 plain yogurt

- 1/2 low fat milk

- 1 teaspoon honey


Note: add 1 cup of additional berries or fruits for a new taste. Also, if desired substitute milk for fruit juices. Options such as 2 bananas, and 1 cup of raspberries enchance flavour and health benefits.


Mix together all ingredients in blender until smooth. Add in honey to taste.
